Southern Grilled Pork Loin Sandwich with a Creamy Southwestern Pico Sauce
I have been living here in North Carolina for two years now, and I love it! The casual lifestyle, the friendly people and the pace of everyday life suits me to a ‘T”. There are however, some things I miss from living the majority of my adult life in the southwest~southwestern food! Before I moved to Las Vegas, when I was 22, I had never experienced southwestern or Mexican food! Can you believe it! But, one bite, and I was in love! So I wanted to make something that would showcase what I love about North Carolina and Nevada, and that is how this sandwich, the Southern Grilled Pork Loin Sandwich with a Creamy Southwestern Pico Sauce, came to be!
Southern Grilled Pork Sandwich w/a Creamy Southwestern Pico Sauce
Pork Loin Cutlet
1/2 cup Flour
1/2 cup Bread Crumbs
1/2 cup Salsa
1/2 cup Sour Cream
1 medium Avocado
1/2 teaspoon Garlic Powder
1 slice Baby Swiss Cheese
thins slices of Onion
Bread your pork by dipping it in flour, then egg and then bread crumbs.
Grill your pork until 165 degrees, and golden brown.
Make your Creamy Pico Sauce by mixing up the salsa, sour cream, 1/2 of the avocado, and the garlic powder.
Start putting sandwich together by placing cheese on pork, then your onion, and the other half of the avocado.
Place sauce on sandwich bottom and top.
Drizzle sandwich with BBQ sauce.
Cut in half and enjoy! This sandwich is perfect for enjoying on these hot summer nights we have been having!
